Place 2 ounces chocolate in a microwave-safe bowl. Microwave on low until almost melted, about 1 minute; do not allow chocolate to burn. Stir to melt any remaining pieces. Cool slightly, about 2 minutes.
Drop a small handful of coffee beans into melted chocolate; toss using a fork until completely covered. Transfer beans onto waxed paper using a fork, making sure beans are separated. Repeat with remaining beans. Cool beans until chocolate is set, about 30 minutes.
