Healthy Lemon Bars With Graham Cracker Crust
  1. Preheat the oven to 350F and line a 8x8 square baking pan with parchment paper.

  2. In a medium sized bowl, combine graham cracker crumbs and melted butter using a fork. Press the mixture into the bottom of the baking pan in an even layer. Bake the crust for 8-10 minutes until golden brown.

  3. While the crust is baking, in a separate medium sized bowl, whisk together eggs and add in lemon juice and maple syrup. Whisk. Add coconut flour and lemon zest and whisk again until smooth.

  4. As soon as the crust is done baking, pour the lemon filling over the crust- gently shaking the pan to ensure it is evenly distributed ( do not let the crust cool down)! Reduce the oven temperature to 325F and bake for about 14-16 minutes or until the filling is no longer jiggly. Cool on a wire rack. Once cool, slice into 12-16 equal sized squares.
