Mix 1 tbsp olive oil, garlic, oregano, rosemary, parsley, salt & pepper. Toss sliced veggies in this mix
Arrange vegetable slices in overlapping layers in a round baking dish, creating a spiral pattern; sprinkle sun-dried tomatoes between layers
Combine remaining 1 tbsp olive oil with breadcrumbs and herbs; sprinkle over the veg stack. Add crumbled feta on top
Bake 40-45 minutes until vegetables are tender and topping is golden
Garnish with fresh rosemary sprig and serve hot
