High Protein High Fiber Sheet Pan Pancakes
  1. Preheat oven to 425°F

  2. Mix together 2 cups pancake mix, 2 cups milk, and 2 eggs

  3. Add ground cinnamon to the batter

  4. Spray sheet pan with avocado oil spray

  5. Pour batter into sheet pan and spread evenly

  6. Add frozen wild blueberries as mix-ins

  7. Bake for 10-12 minutes until cooked through

  8. Optional: top with turkey bacon, turkey sausage, eggs, Greek yogurt, or cottage cheese for extra protein
