Apple & Cinnamon Loaf Cake
  1. Cream butter and white sugar.

  2. Add eggs one at a time, beating well after each addition.

  3. In a separate bowl, whisk together flour and baking powder.

  4. Add half the flour mixture to the butter mixture and mix.

  5. Add milk and vanilla extract and mix.

  6. Add the remaining flour mixture and mix until just combined.

  7. Fold in the diced apple, soft dark brown sugar, and cinnamon.

  8. Pour batter into a greased and floured 2lb tin (8x4x3” approx).

  9. Bake at 175C/350F Conventional oven for 50-55 minutes.

  10. Check for doneness at 50 minutes with a skewer or a knife.

  11. For the icing, mix icing sugar with a drop of milk until a slightly runny consistency is reached.
