Rub both sides of the sirloin steaks with dijon mustard. Season with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Sear the steaks for about 4-5 minutes per side for medium-rare.
Remove steaks from the skillet and set aside to rest.
