Line 2 trays with parchment. Melt the dark chocolate and spread out 6 circles around 6cm/2.4inches in diameter, three per tray. Take a short skewer and dunk the strawberries cut side down in the chocolate dipping the edges slightly in the chocolate.
Place around the chocolate disk using 5 strawberry halves per demogorgon head. Repeat with the remaining strawberries (you may need to remelt the chocolate during this process). Spoon some chocolate in the centre. Place in the fridge to set completely.
Make a small parchment piping bag and melt the white chocolate (use a 75% heat if using microwave). Spoon into the piping bag and draw 'teeth' around the centre and on the outside of the strawberry petals (if the chocolate gets too firm, microwave for 8 seconds or so). Refrigerate until set. Store in fridge.
