In a bowl mix water + starter + flour. Cover and rest 40 min.
Add salt + oil, mix it in well. Do 1 coil fold immediately, cover and rest 30 min.
Wet your hands and do a coil fold. Repeat until you complete 3 coil folds total.
Cover and leave for 4 hours or until doubled.
Line a tray with parchment paper and dust generously with flour. Gently transfer the dough onto the tray without deflating it.
Lightly flour the top, then gently stretch the dough from the sides. Divide into 4 pieces and carefully separate them to keep the air inside.
Let them rest for 20 minutes while the oven is fully preheated (at least 40 minutes).
Bake at 450°F (230°C) for 15 minutes, then reduce to 380°F (193°C) and finish baking for about 15 minutes until golden.
