Split Pea Soup with Ham

  1. Prepare the Peas:

    Rinse the split peas in a colander, removing any debris or foreign objects.

  2. Sauté the Vegetables:

    In a large pot over medium heat, warm the olive oil or butter.

    Add the onion, carrot, and celery. Sauté for 5–7 minutes, stirring occasionally, until the vegetables soften and the onions become translucent.

    Add the garlic and cook for another minute until fragrant.

  3. Cook the Soup:

    Add the ham bone to the pot.

    Sprinkle in the salt, pepper, dry mustard, and sage.

    Pour in 3 quarts of water and add the rinsed split peas.

    Bring the mixture to a boil, then reduce the heat to low.

    Cover and simmer for 2 to 3 hours, stirring occasionally.

    The peas should be soft enough to fall apart when stirred gently. The soup should be thick but not pasty.

    If the soup becomes too thick, add more water and stir. If it remains too watery after several hours, remove the lid and let it simmer uncovered until it thickens.

  4. Finish the Soup:

    Once done, remove the ham bone.

    Pull off the meat, chop it into bite-sized pieces, and return it to the soup.

    Reserve the bone.

  5. Storage & Reheating:

    Let the soup cool before refrigerating. It can be stored for up to nine days.

    Reheat as needed, adding water to maintain consistency.

    For enhanced flavor, store the ham bone in the soup and reheat with it in the pot, allowing the gelatin to enrich the soup each time.
