In a jar, combine 2 tbsp chia seeds with ¾ cup milk of choice & ⅓ cup of coconut milk. Stir & let sit for 30 minutes.
Melt approx. 40g of good quality dark chocolate.
Put melted chocolate and chia mixture in a blender, then add 3 tsp cocoa powder, 5-6 tsp maple syrup, and a tiny pinch of salt.
Blend well & divide into containers.
Refrigerate at least 2 hours (pudding consistency) or overnight for a creamy chocolate mousse!
Top with fruit, nuts, or enjoy as is
