  1. Blend all the ingredients except the olive oil in a high-speed blender for 20 seconds.

  2. Then, stir the batter and blend for another 25 seconds. The batter will be thick.

  3. Preheat a large skillet with the olive oil in it on medium heat.

  4. Pour 3 to 4 tablespoons of the batter into the skillet and cook for 2 to 3 minutes until the pancakes begin to bubble.

  5. Flip and cook for another 2 to 3 minutes. The edges will be light brown and crispy.
