Classic Snickerdoodle Cookies
  1. Whisk flour, cream of tartar, baking soda, and salt in a medium bowl.

  2. Using an electric mixer on medium speed, beat melted butter, light brown sugar, and granulated sugar in a large bowl until incorporated.

  3. Scrape in seeds from the vanilla bean and reserve pod for another use.

  4. Add eggs and continue to beat until mixture is pale yellow and thickened, about 3 minutes.

  5. Reduce mixer speed to low and gradually add flour mixture until just combined.

  6. Let sit at room temperature for at least 30 minutes.

  7. Preheat oven to 400° and line a baking sheet with parchment paper.

  8. Whisk cinnamon and remaining granulated sugar in a small bowl.

  9. Portion cookies and roll into balls, then toss in cinnamon-sugar mixture.

  10. Transfer to prepared sheet, spacing about 3" apart.

  11. Bake until edges are lightly browned, about 8–10 minutes.

  12. Let cool on sheets for 10 minutes, then transfer to a wire rack.
