Using an electric mixer and kneading hook, combine all ingredients besides the oil and let it run for 10 minutes until the dough feels a little sticky and soft
Divide the dough into little balls and place on a tray with a generous amount of oil
Cover and rest for about 45 minutes
Prepare 2 parchment paper circles and preheat a pan to medium-low heat
Place a little dough ball between the 2 parchment papers and spread it with your hands as thin as you can
Remove the top paper, flip the paper and dough onto the pan with dough side down
Wait a couple seconds, remove the paper and flip the muffleta
Repeat the process with remaining dough balls, keeping the muffleta pile flipped so they don't dry out
Enjoy with honey and a nice cup of mint tea
