Place pork, paprika, chili powder, garlic, salt, black pepper, oregano, cumin, cloves, and coriander in a bowl. Using hands, combine well.
Add water and vinegar and combine.
Place in airtight container and refrigerate at least 1 hour (overnight is better).
Form into patties and use as desired. Freeze leftovers in air-tight container
Refrigerate overnight if possible to give mixture more time to settle.
Crumble and serve on tacos or burritos instead of making patties.
