Hidden Veggie Mac & Cheese
  1. Add water, cauliflower, squash, and carrots in a pot over medium heat. Cover and cook until vegetables are tender.

  2. In a separate pot of boiling water, cook pasta, drain, and return to pot.

  3. Add cooked vegetables into a blender, including cooking water, and blend until smooth. Add milk and cream cheese and blend again until smooth.

  4. Pour blended mixture over pasta, and add the cheese. Stir until smooth over medium heat.

  5. Simmer and cover for 20 minutes, stirring occasionally.
