Whisk together olive oil or melted butter, honey, brown sugar, salt, and pepper in a bowl until smooth.
Toss carrots in the glaze to coat evenly.
Spread carrots in a single layer on the prepared baking sheet without overcrowding.
Roast for 25 to 30 minutes, flipping halfway through, until tender and caramelized.
Optionally roast up to 5 more minutes for deeper color.
Transfer carrots to a serving dish, spoon any remaining glaze over them, and garnish with parsley.
