Hopi Indian Fry Bread
  1. In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Mix well to ensure the leavening agents are evenly distributed.

  2. Slowly add the warm water to the flour mixture, stirring gently with a wooden spoon or your hands until a shaggy dough forms. May need more water.

  3. Once the dough comes together, knead it on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic.

  4. Place the dough back in the mixing bowl and cover it with a clean kitchen towel. Let it rest for 30 minutes to allow the gluten to relax.

  5. After the dough has rested, heat about 2 inches of vegetable oil in a heavy frying pan over medium-high heat until it reaches 375°F (190°C).

  6. While the oil is heating, divide the dough into 6 equal portions. Roll each portion into a ball and then flatten it into a disk about ¼ inch thick.

  7. Once the oil is hot, carefully add a piece of the flattened dough to the pan. Fry the bread for about 2-3 minutes on each side, or until it is golden brown and puffed up.

  8. Using a slotted spoon, transfer the fried bread to a paper towel-lined plate to drain off any excess oil. Repeat the frying process with the remaining dough portions, making sure not to overcrowd the pan.
