Preheat oven to 375°F (190°C).
Line a baking sheet with parchment paper.
In a large bowl, combine cottage cheese, mozzarella, and eggs.
Add almond flour, baking powder, garlic powder, onion powder, Italian seasoning, salt, and pepper.
Mix until a thick batter forms.
Divide the mixture into 4 equal portions on the baking sheet and spread each into a round flatbread about ½ inch thick.
Bake for 20–25 minutes, until golden brown around the edges.
For extra browning, broil for 1-2 minutes at the end.
Cool for 5 minutes before serving.
Mix: 2 tablespoons melted butter, 1 minced garlic clove, ½ teaspoon dried parsley.
Brush over the hot flatbreads after baking.
