Coat: Place crackers in a large bowl. Drizzle with the seasoned oil mixture and toss gently until evenly coated.
Cheese: Sprinkle the Parmesan and Mozzarella (or Feta) into the bowl, tossing gently so the cheese adheres to the crackers.
Bake: Spread crackers in a tight, single layer on the baking sheet. Bake for 8–10 minutes until the cheese melts and turns golden-brown.
Finish: Cool on the sheet for 5 minutes to let the cheese crisp. Toss with fresh herbs before serving.
