Add honey, lime juice, fish sauce, tamari, grated ginger, grated garlic, oil, and starch to a mixing bowl. TIP: mix the honey and lime first to break down the honey with the acid. add your chicken and marinate for at least 20-30 minutes
Add minced ginger and garlic, shallots, and scallions to a hot pan with oil. sauté for 2 minutes before adding in the bok choy. sauté for a further 2 minutes and take off the heat
Cook the marinated chicken on a grill or in a pan until nice and brown
Mix cooked veggies into the rice
Plate and serve
