Scallion Noodles
  1. Cook 200g noodles according to packet instructions

  2. Heat 1 cup neutral oil on medium heat

  3. Fry the white parts of spring onions for about 5 minutes until fragrant

  4. Add the green parts of spring onions and fry for another 10 minutes until lightly crispy

  5. Place caramelised spring onions on paper towels to absorb excess oil and crisp up

  6. In the same oil, whisk together 2 tbsp light soy sauce, 2 tbsp dark soy sauce, 1 tbsp oyster sauce, 1 tbsp sugar, and 1 tsp msg on low heat with a gentle bubble

  7. Toss cooked noodles with the sauce and crispy spring onions

  8. Garnish with sesame seeds and chilli oil
