Soak your barley overnight (optional).
Cook your pearled barley according to package instructions.
Set your oven to 200C.
Meanwhile chop up the rest of your salad ingredients. And toast your nuts + agave syrup in a skillet.
When your barley is cooked, spread it out on a baking tray and bake int he oven until crispy.
Make the dressing by adding all ingredients to a jar and shake.
Assemble the salad and enjoy!
