Amish Breakfast Casserole
  1. Preheat the oven to 350 degrees F.

  2. Grease a 9x13-inch baking dish.

  3. In a large skillet, cook the bacon and onion until the bacon is crisp.

  4. In a large bowl, combine the eggs, hash browns, cheddar cheese, cottage cheese, and Swiss cheese.

  5. Stir in the bacon and onion mixture.

  6. Pour the mixture into the baking dish.

  7. Bake, uncovered, until a knife inserted into the center comes out clean, about 35-40 minutes.

  8. Remove the casserole from the oven and let it cool for 10 minutes. Serve!
