Remix of Crispy Enoki Mushrooms + Chilli Crisp Mayo
  1. Prepare the enoki mushrooms by chopping off the brown ends, then slicing in half for smaller pieces.

  2. For the batter, whisk the dry ingredients together in a large mixing bowl, then slowly add your sparkling water, stirring as you go. You want a pancake batter consistency - add a splash more water if required.

  3. Carefully coat each mushroom (both sides) in the batter so that they are fully covered.

  4. Preheat your Ninja CRISPi, then air fry in batches for 15 minutes on each side, before turning + repeating. You want the mushrooms to come out nicely golden, brown + crispy on the outside, but still soft on the inside.

  5. For the mayo, simply mix all the ingredients in a bowl. Season to taste + set aside until ready to serve.

  6. Recrisp your mushrooms if required, then get on a plate + serve with the chilli crisp mayo - enjoy!
