Stir yeast into the water with the brown sugar and leave 15 minutes till activated and foamy.
Add flour, milk powder & salt to stand mixer and mix briefly.
Add the yeasty water, brown butter and mix - while that's going add the mashed potato.
Continue mixing then add an additional 50g bread flour, then another 50g if required so the dough is very soft & smooth and pulling away from the edges of the bowl.
Put into an oiled plastic tub and cover till doubles in size.
Tip out onto worktop or silicone sheet, and gently knead, adding a sprinkle of additional flour as required.
Divide into portions (approx 8) roll out into pizza like discs.
Add grated cheese, then a couple spoonfuls of cooked mince spread out.
Fold the dough over the filling and roll lightly. Turn and roll lightly in the other side.
Add to a dry, hot frying pan and cook on both sides. I do each side twice and use a lid to make sure it's cooked through.
Remove to a board and rub all over with a knob of butter letting it melt in.
Sprinkle with flakey salt and chives.
