  1. Combine the Infusion: Add all the spices, dried black lemons, and fresh lemon zests into a sterilized glass Mason jar. Pour in the vodka.

  2. Steal the Flavor: Seal the jar tightly and shake well. Store in a cool, dark place for 2 to 3 weeks, shaking daily to extract the intense flavors.

  3. Make the Bitter Water: In a separate small jar, combine your gentian root and 1 cup of water. Let this sit for the same 2 to 3-week period, or simmer it gently for 15 minutes and let it cool.

  4. Strain and Filter: After the 2-3 weeks, strain the solids out of both mixtures using a fine-mesh sieve lined with cheesecloth or a coffee filter.

  5. Combine & Bottle: Mix the strained botanical alcohol with the bitter water and ⅓ cup of simple syrup. Bottle the finished product in small glass dropper or dasher bottles.
