W/ hand, use dough to clean up side of bowl
Sit for ~15min (uncovered)
Optionally? give some little folds to get feel
Mix again on 3 til smooth ball and pulls off hook cleanly. Also pulled off bowl cleanly ~"few" min @8:51
Hand knead into nice ball, remember to slap. @10:30
Bulk ferment in covered bowl w/ little oil spread around. ~2h room temp
Split in half, shape into balls, 2nd rise ~2hr @11:00
