Brown the ground beef and mix in the taco seasoning and beans.
In a bowl, mix the Greek yogurt and ½ can of enchilada sauce until smooth.
In a greased casserole dish: Add 4 tortillas, Add half of the beef and beans mixture, Spread the Greek yogurt mixture, Sprinkle with half of the cheese, Add 2 more tortillas, Add the rest of the beef and beans mixture, Top with the remaining enchilada sauce, the queso, and the rest of the cheese.
Bake at 350°F for about 25-30 minutes, until hot and bubbly.
Let it cool completely before slicing.
