Mexican Inspired Street Corn Hot Honey Bowl
  1. Cut the sweet potato into tiny cubes

  2. Spray with avocado oil, season with salt, pepper, and cornstarch

  3. Air fry the sweet potatoes until golden brown and crispy

  4. Make the street corn salsa by combining corn, blended cottage cheese, light mayonnaise, cotija cheese, lime juice and zest, diced jalapeños, chopped cilantro, and cubed avocado

  5. Optionally add Tajin

  6. Sear the lean ground beef in a hot pan for 3-4 minutes per side until browned

  7. Add taco seasoning and deglaze the pan with water

  8. Serve the ground beef over the sweet potatoes and top with the street corn salsa

  9. Drizzle with hot honey
