Arrange a rack in the middle of the oven and heat to 400°F. Line a baking sheet with parchment paper and set aside.
Divide the pizza dough into 4 equal pieces. Roll each piece into a 5x7-inch rectangle about ¼-inch thick. Position the rectangles so that a long side is facing you. Brush each with 2 tablespoons of the Caesar dressing, leaving a ½-inch border. Scatter ½ cup of the chicken, ¼ cup of the bacon, and ¼ cup of the cheese over the dressing on each rectangle.
Starting with the long side closest to you, roll one of the doughs up tightly into a log. Pinch the seam and the ends closed. Place seam-side down on the prepared baking sheet. Repeat with the remaining doughs.
Brush the top and sides of each chicken bake with more Caesar dressing. Sprinkle the remaining ½ cup of cheese evenly over the top of the chicken bakes.
Bake until golden-brown, 15 to 17 minutes. Let cool for 5 minutes on the baking sheet before serving.
