Chicken Salad Without Celery
  1. Cook chicken breasts in Instant Pot on high for 12 minutes, natural release for 10 minutes, or use pre-cooked chicken.

  2. Dice red onion, red bell pepper, apple, grapes, parsley, dill, and radishes if using.

  3. Pulse chicken, onion, and relish in food processor until finely chopped.

  4. In a bowl, whisk mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, lemon juice, paprika, and honey.

  5. Combine chicken mixture with dressing, fold in fruits and herbs.

  6. Chill for 30 minutes before serving.
