In a small bowl, mix together the first 6 ingredients.
Drop 1 tablespoon size pieces onto a lined (parchment/silpat) sheet pan. Freeze ~30 minutes until firm.
Fill a small bowl with cocoa powder. Remove sheet pan from freezer. Roll pieces into balls and roll in cocoa powder to cover.
Return the balls to the freezer on a clean portion of the sheet pan. Keep frozen.
