Mexican Beans And Rice
  1. Step 1: Sift through beans and make sure there are no bad ones or garbage.

  2. Step 2: Rinse beans and then soak in water. Lots of water. Put in fridge and let it set overnight.

  3. Step 3: Cook the beans. Add 8 cups of water to a pot. Cut the onion in half and place in. Add 2 bay leaves. Add 4 cloves of smashed garlic. 4-5 stems of cilantro.

  4. Step 4: Bring to boil then lower heat to simmer. Simmer for 60-90 minutes. Mix beans around occasionally to prevent sticking.

  5. Step 5: Beans are ready when they are easily 'smashed' or squished.

  6. Step 6: Add oil to pot. Add diced half onion and place in pan. Add salt to sweat. Add the beans with some of the liquid from the cooking broth. Salt and simmer for 15-20 min.

  7. Step 7: Make tomato broth. To a blender add canned whole tomatoes, cumin, chicken stock, garlic, and half onion.

  8. Step 8: Make the rice. Rinse the rice until it clear. Toast it in the pan for about 5-8 minutes.

  9. Step 9: Once toasted, add tomato broth. Watch whether you need to add the whole broth or not.

  10. Step 10: Bring to a simmer then cover for 12-13 minutes.

  11. Step 11: Turn off heat. Let it sit for a couple more minutes.
