Start by mixing yeast, sugar and warm water. Mix together and let proof.
Once it's bubbly add oil, milk, eggs, flour, pudding powder and salt.
Knead on low speed until dough comes together and is smooth but still sticky when pinching. (Dough should slightly stick to your fingers but not too much. If dough is still very wet add a little flour at a time.)
Transfer to an oiled bowl, cover and let rise until doubled - approximately an hour and a half.
While it rises prepare your filling. Simply combine sugar, cocoa powder, chocolate pudding powder, cinnamon and salt.
To assemble : If dough is slightly sticky oil your counter lightly.
Using a rolling pin, spread dough into one large rectangle Make sure to roll out as thin as possible - the thinner the dough the more layers you will achieve.
