In a mixer, combine cream cheese, caramel topping, egg, granulated sugar, and apple pie spice. Beat until smooth and creamy.
Fill each cored apple about two-thirds full with the cheesecake mixture.
Place the filled apples on the prepared baking sheet and bake for 22 to 25 minutes until the cheesecake is set and the apples are tender.
Allow to cool slightly, then transfer to a serving plate, sprinkle with chopped nuts, and drizzle with caramel sauce.
