Chocolate Chip Cottage Cheese Muffins
  1. Preheat your oven to 350°F and grease a 12-slot muffin tray.

  2. Add the cottage cheese, oats, eggs, syrup, baking powder, vanilla, cinnamon, nutmeg and salt to a blender. Pulse until the mixture is mostly smooth.

  3. Fold in the chocolate chips by hand with a spoon.

  4. Divide the batter evenly into 9 to 12 muffin slots. Sprinkle a few extra chocolate chips on top.

  5. Bake for 20–22 minutes until golden brown or a toothpick comes out clean.

  6. Let them sit in the pan for 5 minutes, then move to a wire rack to cool for another 15 minutes.
