In the bowl of a stand mixer, combine warm water, sugar, and yeast. Let stand for 5 minutes, until foamy.
Add flour, melted butter, and salt to the yeast mixture. Mix with the dough hook attachment on low speed until a dough forms. Increase speed to medium and knead for 5-7 minutes until the dough is smooth and elastic. If the dough is too sticky, add more flour, 1 tablespoon at a time.
Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.
Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper.
Punch down the dough and divide it in half. Roll each half into a long rope, about 24 inches long. Cut the ropes into 1-inch pieces.
In a large pot, bring 10 cups of water and baking soda to a boil. Gently drop the pretzel bites into the boiling water, about 10-12 at a time. Boil for 30 seconds, then remove with a slotted spoon and place on the prepared baking sheets.
Brush the pretzel bites with melted butter and sprinkle with coarse sea salt.
Bake for 12-15 minutes, or until golden brown.
Let the pretzel bites cool slightly before serving. Serve warm with your favorite dipping sauces.
