Make up the marinade in a Tupperware
For Bac'n, slice the tofu thinly into 'rashers' for Pancetta, small cubes
Marinade the tofu in the liquid for as much time as you have available. Overnight is ideal to let the flavours permeate, but an hour will do if that's all you have.
I prefer to oven bake my tofu on a sheet of baking paper, especially for Bac'n, so it goes crispy but you can pan fry too. The time you cook for depends how crispy you want it.
