  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, combine the sliced zucchini, vegan shredded cheddar cheese, vegan shredded mozzarella cheese, vegan bacon bits, red bell pepper, green bell pepper, red onion, garlic, dairy-free sour cream, vegan mayonnaise, nutritional yeast, basil, oregano, salt, and pepper.

  3. Transfer the mixture to a greased casserole dish.

  4. Bake in the preheated oven for 25-30 minutes or until the zucchini is tender and the top is golden brown.

  5. Serve hot and enjoy!
