Breakfast Burrito Bowl
  1. Season 2 cups diced potatoes with 1½ Tbsp olive oil and ¼ tsp each of chili, garlic and onion powders

  2. Add salt and pepper to taste

  3. Bake at 400°F for 15 to 20 minutes, flipping halfway through, until potatoes are fork tender and golden

  4. In 2 bowls, add potatoes, warmed black beans, cooked bacon, avocado slices, cheese, salsa and scrambled eggs
