Divide oil between two frying pans
Cook leeks in one pan until soft
Cook garlic and ginger in the other pan until crisp and brown
Drain crispy garlic and ginger on paper towels
Add rice to the pan with leeks and stir fry until rice browns slightly
Cook egg separately
Mold or place rice in a bowl
Top with fried egg
Add soy sauce and sesame oil to taste
Garnish with crispy fried ginger and garlic
