Combine pistachios, maple syrup, rosemary, salt, pepper.
Cut puff pastry into 3×3-inch squares.
Add brie cubes and top with pistachio mix.
Pinch corners, place seam-side down.
Bake 15–20 minutes until golden.
Add cranberries or drizzle maple syrup.
