Preheat your oven to 400ºF.
In a mixing bowl, combine whipped potatoes and sharp white cheddar. Mix until well combined, then scoop into the Potato Skins.
Place the loaded potatoes on a foil-lined baking sheet. Top each loaded potato with Pulled BBQ Chicken, Caramelized Onions, and additional sharp white cheddar. Bake for 15 to 20 minutes, until the cheese is melted & golden brown.
While the potatoes bake, assemble the side slaw: In a mixing bowl, whisk mayonnaise, vinegar, and sugar until smooth. Stir in cabbage and a pinch of chives.
Garnish the twice-baked potatoes with additional chives and barbecue sauce. Serve alongside the side slaw.
