Sausage Gnocchi Soup
  1. Add olive oil to medium heat pan, cook 1 diced yellow onion until translucent

  2. Add minced garlic

  3. Add 1 lb mild italian sausage

  4. Once cooked, add seasonings (salt, pepper, italian seasoning, parsley, oregano, garlic powder, onion powder & crushed red peppers, and tomato paste)

  5. Then add 2 cups chicken broth

  6. Once mixture is boiling, add gnocchi. cook for 2-3 minutes

  7. Turn heat down to low and add 2 cups heavy cream

  8. Stir in 3 oz grated parmesean cheese (can sub for romano cheese)

  9. Add diced spinach to pan

  10. Let it simmer on low for 10 additional minutes to thicken sauce

  11. Serve and enjoy!
