Prick center by using a fork to prick the inner rectangle area (not the border) all over. This prevents excessive puffing in the center.
Par-bake pastry by placing on parchment-lined baking sheet and baking at 400°F for 10 minutes until lightly golden. The center will puff—gently press down.
Layer toppings by arranging brie pieces evenly over the center, leaving border clear. Scatter cranberries, crumbled turkey bacon, pecans, and fresh thyme over brie.
Drizzle and season by drizzling honey over everything and adding light sprinkle of salt and black pepper. Brush border with beaten egg.
Bake until golden at 400°F for 15-18 minutes until pastry border is deep golden brown, cheese is melted and bubbly, and cranberries have burst. Serve warm.
