Crispy Quinoa Salad
  1. Cook quinoa in chicken stock

  2. Mix cooked quinoa with sesame oil

  3. Spread mixture on lined baking tray

  4. Bake at 180°C for 35-40 minutes until golden and crispy, mixing 3 times throughout

  5. Chop cucumber, avocado, shallots and prepare edamame beans

  6. Mix peanut butter, soy sauce, and honey in a bowl

  7. Add boiling water to dressing until desired consistency is reached

  8. Combine crispy quinoa with vegetables

  9. Pour dressing over salad

  10. Mix, serve and enjoy
