Cut the peppers in half and take out the core and seeds.
Boil them for about 10-15 minutes. Once done, set aside and start making the stuffing.
In a large skillet, melt the butter and sauté the onions, chopped bell peppers, and celery in the butter for 5 minutes (until vegetables are tender).
Add the garlic, parsley, shrimp, cajun seasoning recipe, tomato sauce and hot sauce. Cook another 5 minutes.
Add salt as needed and remove from the heat.
Mix the breadcrumbs with 1 cup of the shredded cheese and add to the seafood mixture.
Fold in the crab meat gently to keep some of the lumps intact.
Stuff the peppers with the mixture and place in a baking dish.
Top with the remaining cheese (and more breadcrumbs if you want).
Put about a ½ cup of water in the bottom of the dish (enough to cover the bottom) and bake at 350 degrees for 35 minutes.
