Combine ¾ cup yogurt, ⅓ cup herbs, ¼ cup feta, 1 tablespoon oil, 1 teaspoon lemon zest, 3 tablespoons lemon juice, grated garlic, ½ teaspoon pepper and ½ teaspoon salt in a blender; process until smooth, about 1 minute, stopping to scrape down the sides as needed.
Transfer the dressing to a large bowl. Add sliced cucumbers, rinsed chickpeas and halved tomatoes; toss to coat. Garnish with additional herbs, if desired.
Notes
Feel free to substitute yogurt for the cottage cheese, but be sure to reduce the amount of lemon juice slightly to maintain a balanced flavor.
Herb suggestions: dill, parsley, chives. Or you could try basil or mint.
