Season boneless skinless chicken thighs with garlic powder, onion powder, white/black pepper, and salt
Cook chicken in hot cast iron to get char. Flip to finish cooking. Set aside to rest before cutting.
In the same pan, combine soy sauce, hoisin sauce, brown sugar, bourbon, and minced garlic to make the sauce.
Thicken the sauce with cornstarch slurry if desired, and dilute with water as needed
Cut chicken into bite sized pieces and add to thickened sauce.
Garnish with green onion and serve over white rice
