Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
In a large mixing bowl, combine the peanut butter, granulated sugar, brown sugar, softened butter, and egg. Mix until smooth and well-combined. Add the baking soda and gradually stir in the flour until the dough is soft but firm enough to hold its shape.
Roll the dough into 1-inch balls and roll each ball in granulated sugar. Arrange the dough balls on the lined baking sheet, spacing them about 2 inches apart.
Bake the cookies for 10–12 minutes, or until the edges turn golden brown. Press a Hershey’s Kiss into the center of each cookie right after removing them from the oven.
Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
